Omaha grew around the railroad industry and its importance in our history is well-known. At the center of the nation, Omaha was a hub for travelers from all parts of the country, and really the world. This merging of regions required dining cars of the rail lines to meet a wide variety of tastes and preferences. Each rail line had its specialties, and together those recipes help comprise “American” food.
